Am I right in assuming that by setting all speakers to large on the DV79 and all to small in the AVR250, the sound will only get processed once (at the amp) leading to less DSP degradation??

The size settings on the DV79 refer only to the analogue outputs. When you use these outputs you will be going in to the DVD-A input on the AVR250 and thus have no processing done in the amplifier.
When playing DVD's using the digital output into the DVD input of the AVR250 then the speaker size settings are on the amplifier.
In both cases only one set of processing is happening.
