Pr signals are colour difference signals. The Y signal contains full bandwidth black and white picture information, and the colour difference signals contain bandwidth reduced colour information.

I'm afraid that I find it difficult to understand your post......... other then that you've got a black and white picture.
It's possible that the input of the projector is set to composite video. When you'd connect composite video you'd get a colour image, when you'd connect component video, you'd get a black and white image. Try checking what the input of the projector (you should find it in a menu) is set to.
