Saw - the movie, questions ?

My apologies if these have been asked before (tried searching but 'Saw' is too small a search word).

In the uncut DVD, what has been left intact. I watched the US version yesterday (the one in the natty see through sleeve) and noticed no real difference to the theatrical release - any ideas ?

Also, regarding the film (turns spoilers on...)

Why was Zep targetted ? All of the others had things which they were not grateful for (affairs, drug addict, suicide etc). I guess the same could be said for Adam, although as a photographer, earning a living off others peoples misery may be the reason.

SPOILER Question why was the orderly guy picked on as he was sticking up for the guy who did all the plotting? :confused:
