You can downgrade any subscription channel package (Sports, Movies or MIX ) within the 12 months as long as you continue to have the minimum 1 MIX to meet the subsidy agreement with the exception of the HD MIX which is 12 months. This means if you go the SKY+HD route from SKY and you decided to drop the sports then you would continue to pay for the Variety (1 MIX) and HD Mix currently at £26.50 (until VAT goes back up or Septembers annual price review).
